Jam, but not the traffic kind.

All I did yesterday was undo the ½ a sock I have knitted. I watched Stargate – and what a Schrodinger’s cat of an episode it is. I think there were three teams , as I like to call them : ‘our’ SG 1, clone SG 1 and ‘daggy’ SG 1. Karen and I have talked long and hard about this time travel conundrum and have come to no real conclusion. We are, however, going to watch it again tomorrow. We are also writing reading comprehension questions for some books for her class at school. Today she took possession of her new blue car. It is all lovely and shiny and clean. The only problem is every time she indicates she actually activates the windscreen wipers!!!.

The girls were at home alone from 11 till almost now, 5-45 pm. They have hardly ever been left alone this long. I haven’t even been to work since I had Peri and only for 3 terms when Harki came.
Vundy and Tori were home with each other when I still went to work. The Labradors are very happy to see me. Aunty Captain Mrs Archer sent them vegetable salad and half a pumpkin. They will have lovely breakfast tomorrow. I made coconut and jam slice. It is very old fashioned but the smell from the freshly baked slice was redolent of happy childhood years!!!
Tonight I am knitting more of the Fibonacci Jumper as it is now known. I am knitting the back. I have decided to do 4 separate pattern for the patterned parts. Have I said this before? I probably have. The Labradors have abandoned me now and are chewing on old fossilised bones as they are desperate for food!!

Coconut and Jam Slice
BASE
150 g cubed butter
225 g plain flour
110 g icing sugar
TOPPING
2 eggs
110 g caster sugar
2 cups shredded coconut
Jam of your choice
Base: Process or use a strong mixer to combine the ingredients until they come together. Knead into a ball, chill, then press into a lined slice tin. Bake for 15 minutes at !80 C ( 160 ff) Cool slightly and spread generously with jam.
Topping: Beat eggs and sugar till creamy and then mix in coconut. Spread firmly over base and then bake again for 20-25 minutes. Cool in tin. It is very nice warm. BE WARNED, the jam stays piping hot for a while, so don’t burn your mouth. Raspberry or blackberry jam are tradition at our house.
