Say custard - your pants are busted (childhood taunt)
Yesterday I went to Karen’s and we did write reading comprehensions questions and then watch Stargate and discuss theories of time!! I made really nice apple muffins. I made them up and they were yummy ( recipe follows)Last night I rang my mum for Mothers’ Day and we had a long chat and then I had to wait till after 10-30 to tape Navy NCIS with the yummy Mark Harmon, Michael Weatherly and David McCallum ( OK he is fairly old but Illya Kuryakin was divine!!!) I was forced to watch the end of Big Brother and let me tell you, all of the women appeared nubile, young and gorgeous while the men were not even third rate. If I wanted to watch BB for the male eye candy I would have more fun poking myself in the eye with a stick. And Southern Cross has just decided to start NCIS with episode 11 of season 2. They have casually discarded the first 10 episodes. No wonder we all buy our TV shows in boxed DVD sets now. You can’t rely on TV anymore.I diligently knitted away and I have cast on for the shoulder and I am doing butterfly stitch instead of basket stitch. Butterfly made using yfwds and pssos and you make 2 holes one row and then 2 on the next straight on top and it looks like a little butterfly. The butterflies are off set every time so the are evenly spaced.Today so far we have walked to the shop to buy C3PO Star Wars pins and then I went to the PO in town and bought Karen ‘Creatures from the Slime” fossil stamps, activity pack and UV fossil finder. I went to the new Suzanne Grae shop and bought a new pair of light green stretch cord jeans for $30 instead of $40!! They are too long but a hem is all that is needed. Oh and I bought new size 13 tiny tiny needles for the knitting of the socks. Strangely, I have bought 2 lots of needles and I didn’t receive 15% discount either time. Ah the vagaries of Spotlight.Now I feel quite dizzy and tired. The Labradors have been fed, so I am off for a nap. What colour am I up to? Have no idea!!!!! We're going the blue.
Apple Custard Muffins.
CUSTARD
3 tbspn custard powder
1 tbspn caster sugar
250 ml milk
20 g butter
1 tspn vanilla extract
MUFFINS
150 g butter
150 g brown sugar
125 ml sour cream
2 eggs
300 g plain flour
4 tspn baking powder
1 tspn mixed spice
2 or 3 Gala coarsely grated ( I like the skin left on, it looks cheery)
Custard: Mix powder and sugar with a little of the milk. Continue to stir and place pan over low heat. Gradually add the rest of the milk. Bring slowly to the boil. Stir briskly as it boils and thickens. Remove from heat. Stir in butter and vanilla. Cool slightly.
Muffins: Preheat oven to 200 C ( 180 ff) and pout out 12 muffin papers in the tin. Melt butter and add sugar, eggs and cream. Stir in apples and sift in flour, baking powder and spice. Mix till just combines. Put enough mixture into the paper case to cover he base, top with a spoonful of custard and then cover with more muffin mixture. Bake for 20-25 minutes. Cool 5 minutes in pan and then on a rack. Be careful as they are lovely warm, but the custard can be very hot!!!! These freeze really well too.
