Weir-d!!!!
Yesterday was a day of recovering!! I slept till 11-30 am, if there was a medal for sleeping I would get a gold one!!! I didn’t get out of pyjamas all day either, but I ate the most lovely fresh corn and zucchini fritters, with onion, celery, bacon, cheese, cherry tomatoes, parsley and red capsicum. I squeezed some lemon juice on top and they were just divine. I made them up, so there is no recipe, everything was just fresh from someone’s garden!!! The Senior Sergeant rang to see if I was OK and reassured me and said basically that the officer had no idea I was so upset, but he did give me his private line number to ring if I ever need to. It made me feel happier, but I am still nervous driving. I have only driven to Cathy’s and to the dam, nowhere else yet. I shall have to go out in the car today to check Karen’s Friday mail.
They were nice cold later on too. I watched 4 episodes of Stargate SG1, the last 2 of season 7 and the first 2 of season 8. It was a bit disconcerting to find Dr Weir being played by 2 different people, especially as I watched them back to back. I like Jessica Steen best. It is very hot here today, it is meant to be 28 C about 90 F and it is 1/6 of the way into Autumn. It may be hotter tomorrow. We went for a walk at 8-45 am and now we are hiding inside. I filled the paddle pool with fresh clean water for the Labradors though, and they have had a cooling play.
I am cross that my Better Homes and Garden magazine has not arrived in the mail this month yet. It was out on Wednesday, 9th, and the show was on Friday, and the earliest it could possibly arrive now is Tuesday as it is the Labour Day/8 Hour Day holiday tomorrow. I subscribe mainly as I hope I will get the magazines earlier than the newsagents do, but this time it has failed miserably. I will be at the least 7 days behind. I so want to see the Easter cooking and if there is any craft and I look at the magazine in the shop and yearn for it, but I can’t buy it as one is supposed to be coming. Sigh.
Choc-Chip Slice
150 g butter
110 g caster sugar
110 g brown sugar
2 eggs
120 g plain flour
75 g self-raising flour
250 g choc-chips of your choice
Preheat oven to 180 C ( 160 ff) and grease and line a slice tin ( 16 x 26 cm)Cream butter and sugars, beat in eggs well. Add choc-chips to flour and coat then fold into wet mixture. Spoon into tin and smooth down, bake for about 30 minutes, cool in tin!!!
You can add any kind of nuts or dried fruit or different flavours of chocolate. You can substitute cocoa for some of the plain flour too.
